Three different chillies - Guajillo, Ancho, and Pasilla - are used to create this highly flavourful chilli paste. Guajillo and Pasilla give fruity notes, with Ancho lending a more smoky, earthy aroma. The chillies are moderate in spice level but pack a real punch in terms of flavour.
The chillies are first toasted on a comal to release their aromas. Other spices and ingredients - such as cumin, oregano, garlic, bay leaves, black pepper, and vinegar - are then added.
Use this paste to enhance your cooking - a little goes a long way. Spread over fish or meat as a marinade (e.g. grilled on the bbq) or to elevate vegetables. Create a Mexican breakfast such as ‘Huevos Rojos’ by adding a dollop of this to the scrambled egg mix (serve with tortillas, beans, and avocado to go the full hog). Add it to broths such as soups to give a flavourful punch or try Tacos Birria style (beef cuts slow cooked in a chilli sauce).
