Chile pasilla
One of Mexico’s more fruity and sweet chillies. We use it to give a nice spicy depth to our chocolate and raspberry brownies. In Mexico it's often used with meats like pork and to prepare moles (savoury sauces made of nuts, fruit and spices). In Mexico, it's said “comer sin chile es como comer incompleto” (“eating without chilli is incomplete”) - ~90% of dishes In Mexico contain chilli. Chilies are highly acidic - fresh, they've almost six times more vitamin C than grapefruit!
