Jalapeños take their name from the Mexican city of Jalapa where they were cultivated some 6,000 years ago. The chillies range from mild to medium spiciness depending on their provenance and maturity (the more mature the spicier). Their earthy vegetal flavours and varying heat make them versatile enhancements to practically any dish. They're often the main chilli in Mexico’s fresh and vibrant salsas.
