Central Mexico Feast - Where to find Mexican ingredients
Here we’ve listed the essential Mexican ingredients used in the Central Mexico Birria & Rajas Taco Feast Workshop and where to find them
Soft corn tortillas
Making tortillas from scratch
- If you want to make your own tortillas from scratch, you will need ‘Maseca’ which is corn flour made from dried ground corn. You can find this in Mexgrocer’s webshop.
- You'll also need a 'tortillero' (tortilla press) to press the tortillas
Buying tortillas

We recommend Taiyari Tortilleria just outside Amsterdam. They make delicious corn tortillas (as well as great ‘totopos’) and offer home delivery via their web shop.

You’ll only need to heat them up for about 10 seconds on each side on a griddle plate or dry frying pan, or of course a Mexican ‘comal’ if you’ve got one! They also freeze well in case you want to stock up

Fresh and Dried chillies
E.g. Poblano peppers, Jalapeños , Habaneros, Chilli Ancho, Chilli Guajillo
- Generally you can find fresh chillies such as Jalapeños and Habaneros in local supermarkets, greengrocer or otherwise wholesalers
- Otherwise you can order fresh and dried chillies and chilli peppers from specialist producers such as Westland Peppers in South Holland. They have a great selection of dried and fresh chilli peppers, with delivery throughout the Netherlands and many parts of Europe. On Saturdays, you can also do tours of their greenhouses and discover all their exciting pepper varieties
Tomatillos (little green tomatoes)
- Used in salsa verde. You can find tinned version of tomatillos in local speciality international food shops such as Tijn’s Tokyo in Amsterdam and in wholesalers, such as Sligro and Hanos
Beef - for Birria
- A fatty tender piece of beef works well such as rump or sirloin. In the workshop we used 'Pikanha' - which is the area at the top of the rump. Best to ask your local butcher if they have Pikanha / similar, or otherwise you can find it in wholesalers such as Hanos or De Kweker
